This Bar Service & Cellar Gas Handling SOP (Safe Operating Procedure) covers bar service duties and the safe handling of CO2 and beer gas cylinders used to dispense draught beverages. It covers checking the gas detection alarm before entering the cellar, securing cylinders, inspecting regulators and couplers, changing kegs and gas cylinders, managing spills and glassware, and evacuating if the alarm activates. It's written by WHS specialists, aligned to Australian WHS legislation, and fully editable in Microsoft Word.

Common questions
Does it cover responsible service of alcohol?
No. RSA requirements are governed separately by liquor licensing law. The SOP refers workers to the venue's RSA requirements during bar service.
What if someone collapses in the cellar?
Workers do not go in to rescue them. The SOP says to call emergency services and follow your confined space rescue procedure, as an unprotected rescuer can be overcome by the same atmosphere.
Does it cover cellars that are confined spaces?
Yes, in part. Where a cellar or gas store meets the definition of a confined space, workers follow your confined space entry procedure and never enter alone.
Can I change it?
Yes. It's a Microsoft Word file, so you can add, remove or change any step, check or hazard, and add your own logo and details.
Does it suit my state?
Yes. It's written to the model WHS laws and suits all states and territories, including Victoria under the OHS Act and Regulations.
What if it doesn't suit my work?
You're covered by our 30-day money-back guarantee if it isn't fit for purpose.
